Description:
Healthy foods for the whole family Per Serving (4): Calories 408 (20% from fat); Protein 40 gm; Carbohydrate 39 gm; Total Fat 9 gm (Saturated Fat 4 gm); Cholesterol 82 mg; Sodium 515 mg; Dietary Fiber 7 gm.
Ingredients:
  1. 1 can (14-1/2 oz.) diced Tomatoes, drained
  2. 1 clove garlic, crushed
  3. 2 to 3 Tbsp. fresh lime juice
  4. 1/2 tsp. ground cumin (optional)
  5. 1 cup cooked kidney beans
  6. 1/3 cup sliced green onions
  7. 2 Tbsp. chopped cilantro or parsley
  8. 1 lb. beef steak
  9. 2 cups hot cooked rice
  10. Variation:
  11. substitute black beans or Del Monte whole Kernel Corn for the kidney beans.
Preparation:
  1. bowl

  4. chopping board
  5. measuring spoon
  6. cookware
Instructions:
  1. Combine tomatoes, garlic, lime juice, cumin, beans, green onions and cilantro in bowl; set aside.
  2. Season meat with salt and pepper, if desired.
  3. Cook over hot coals (or broil) 3 to 5 minutes per side or until done as desired.
  4. Slice meat thin and top with tomato mixture. Serve over rice and garnish with lime wedges and additional cilantro, if desired.
  5. Tips:
  6. For a low-carb variation, omit the kidney beans and rice and serve over lightly dressed salad greens.
  7. Watching your fat intake? Choose a beef cut that is lean, such as top sirloin or flank steak.
